One Tray Potato Hash

Ingredients

Top tip:

Experiment with adding different vegetables, or spice it up with some chopped chorizo or another sausage – just make sure it is cooked through and piping hot.

Method

    Preheat the oven to 220C/200C Fan/Gas 7.
  • !
    Cut the potatoes into bite-size chunks and toss with the chilli flakes, oil and a generous amount of salt and pepper on a baking tray. Roast for 20 minutes.

    Thickly slice the pepper, cut the onion into thin wedges and halve the tomatoes, then remove the tray from the oven and mix in with the potatoes. Return to the oven for 15 minutes.
