Flavour boosters:
- Chopped fresh chilli or dry chilli flakes
- Dried herbs e.g. basil or oregano
- Tomato purée
This is a great staple sauce that can be used as a base for lots of things like curries, chillis, bolognese or as a pizza sauce.

In a saucepan, melt the butter over medium heat. Once melted, add the garlic and onion and gently cook until transparent.While this begins cooking, peel, chop and finely slice garlic then mix add to the pan with onions. Stir regularly until onions are translucent.

Pour in the tomatoes, breaking them up with a wooden spoon if not already chopped. Add in any flavour booster*. Let it simmer on a low heat while you cook any other elements.
